生鲜食品供应链零库存控制策略(任务书,开题报告,论文14000字)
摘  要
生鲜食品在居民日常消费中所占比例越来越大，其易腐性导致生鲜食品损耗严重，如何降低供应链上生鲜品的库存成为研究关注点。本文以生鲜食品为研究对象，以追求“零库存”为终极目标，对供应链主要环节进行库存控制研究，并结合案例，理论与实际相结合，提出一些策略方法控制供应链上的库存，以期降低我国生鲜食品巨大的鲜度损耗。
论文主要研究了生鲜食品供应链环节最为关键的冷链物流和超市库存控制及沃尔玛生鲜库存控制案例。
研究结果表明：传统库存管理理论不适用于生鲜食品；追求“零库存”是一种理想化状态；冷链物流发展是生鲜品库存控制极其重要的环节；超市作为生鲜食品零售终端，需要严格的库存控制；即使是像沃尔玛这样有多年生鲜库存管理经验的企业，也同样面临库存困扰。
本文的创新点在于：（1）在生鲜食品供应链加工、流通、消费等各个环节，主要对冷链物流和超市库存控制进行研究分析，突出重点；（2）对沃尔玛生鲜库存管理进行分析，理论与实证结合，充分论证策略可行性。

Abstract
Fresh food accounts for an increasing proportion of household consumption. The perishability causes severe loss of fresh food,so how to reduce the inventory of the fresh food supply chain becomes the emphases.The article used raw food as the research object,pursue low inventory or even ‘zero inventory’.Conduct inventory control research on the main parts of the supply chain. Combined with the Wal-Mart case,integrate theory with practice,propose strategic method to control inventory in supply chain.in order to minimize the loss of raw food in our country.
The paper mainly studies the key cold-chain logistics and supermarket inventory control of raw food supply chain,also the Wal-Mart’s inventory control case of raw food.
The result of research shows that: Traditional inventory management theory does not apply to fresh food;The pursuit of zero inventory is an idealized state;The development of cold-chain logistics is extremely important in the control of raw food stock;Supermarkets,as raw food retail terminals,need strict inventory control;Even companies with years of experience in inventory management,such as Wal-Mart,face inventory problems.
The innovation points of this article is:(1)In the process of processing and consumption of raw food supply chain,the main factors are the analysis of cold-chain logistics and super market inventory control.(2)The analysis of Wal-Mart’s fresh inventory management ,the combination of theory and empirical evidence,the feasibility of the strategy is fully demonstrated.
